O Navegador has been through a lot, since 1975, when it first opened its doors to the guests. It was then the only classic restaurant inside an historical buiding downtown Rio. Slowly
it defined its gastronomic identity and got into what it is today: a Brazilian sustainable food restaurant.
But what on Earth this overused word “sustainable”means when it is connected with food? For us, it means that we respect every step of production, in all our dishes daily cooked. It means also knowing who planted and took care of the vegetables, fruits and eggs, who raised the cows and also processed the rawmilk cheese we use in our famous cheese bread. We travel to the small farms and rural communities, even if they are far far away, as in the Amazon, to find those precious items that make our cuisine. We do this as part of our job, because, in fact, this is.
But it is not always easy buying directly from small farmers. Comunication, logistics are just some of the problems we face having had this kind of choice. But instead of being put off by it, we feel even more gratified to have found these very special foods at our tables, food with history and geography and of course, with all that rural knowledge applied to them.
Today we celebrate this difficult path. The winners are our guests that can have all the pleasure and health eating our dishes made with our farinhas d’água e polvilhada (manioc flours), raw milk cheeses, hearts of palm pupunha, Brasil assorted nuts, organics freshly picked vegetables and so many other food treasures. Tradition and criation, side by side, so that the biodiversity of our huge and beautifull country can
be known by all that come to know us.
